RECIPES


Peter's Pecan and chocolate chip Pumpkin (Eating) Pancakes
1 cup flour
1 1/2 tsp. baking powder (I like Rumsford--no metally flavor)
1/2 cup sugar
1/2 tsp. allspice
1/2 tsp. cinnamon
1 tsp. salt
3/4 to 1 ] cup milk
1/2 can pumpkin puree
1 egg
1/4 (more or less) cup chopped pecans
1/2 cup (more or less) mini chocolate chips



Toppings
1/3 cu. powdered sugar
1/2 bar cream cheese
1/4 cu sour cream
1/4 cu milk or cream

*additional powder sugar to sift over cakes
*Extra creamy whipped cream (da' real stuff)

In a mixing bowl, mix: egg, sugar, spices, salt milk and pumpkin puree. Sift together flour and powder, and mix into the wet mixed ingredients. Fold in the pecans and mini chips.

The batter is a bit thick. Drop 3-4 oz pancakes into a low-to-medium oiled skillet. You'll press them slightly to form the pancake with the spoon, and cover the skillet . Flip  when the cakes get light brown on the bottom, cook the second side in uncovered skillet.

While the pancakes are cooking,  make the cream topping by mixing together the cream cheese, sour cream, milk, and powdered sugar in a small saucepan, blending while heating. When smooth, set aside.

Sift some powdered sugar over the finished pancakes. Schmear each pancake with the cream cheese topping. Then pile a whip-cream cloud onto each pancake.

Serve with a hot cup of black coffee!




Wanna make Cinnabon at Home?


OK--maybe its not exactly Cinnabon, but it's pretty dang good, and if you give it  whirl you'll love it. Find a Saturday or Sunday, and plot to make these for yourself. Brew a cup of strong coffee to accompany it.

Bit O' Honey (sorta)
I was one of those kids that liked Bit O' Honey. In my adulthood, I make a slightly healthier version of the snack that is protein packed. Unfortunately, I have never measured anything–its all been 'by feel' so the measures here are approximated.

Add 1 and 1/2 cups of Almonds (I use roasted and salted, but if you want to be a bit healthier you can use unsalted) to a food processor and grind it to a coarse meal.

I then squirt in 3-4 tbs of honey and continue to pulse it until it balls up on the sides of the food processor. I roll them into tootsie roll sized candies and wrap them in wax paper or parchment, and store em in the fridge. They are the perfect pick-me-up midday.


Sandwiches from  the Deep End

Nothing is more ubiquitous  than the American Sandwich. Take anything, and two slices of bread (or breadlike substitiutes for that matter) and you have a sandwich.

The varieties of international sandwiches are even more amazing. I've had  (IMHO--when prepared right) the greatest sandwich-- the Vietnamese 'Banh Mi,'  The Puerto Rican Plantain sandwiches, Brown Sandwiches, Welsh Rarebit, and the like as well.

What I want to focus on for this stash segment is the American Varietal, but with unexpected ingredients/combos that make them taste unexpectedly awesome! Below are some I've tried, and I am certainly looking for any good combinations to give a try! Let me know what your unexpectedly awesome combos are (be sure you've actually eaten them).
